Culled from Mystery Chef’s family archives, these no-bake cookies contain alcohol. Since the alcohol does not cook off in this recipe, be sure to let everyone know.
You also don’t have to be from Kentucky to enjoy these bourbon balls, but lovers of good bourbon will enjoy these treats even more. Some have said that it’s especially important to buy high quality bourbon (Maker’s Mark is a good one), since sipping away while making these cookies is half the fun.
These easy-to-make cookies have a lovely, chewy consistency with a bourbon and vanilla flavor. Maker’s Mark bourbon, in particular, has a particular sweet flavor that enhances this recipe.
Not to be confused with the notorious fruitcake, but like the fruitcake these bourbon bites also have another special feature — they keep for quite a while in an air-tight container, such as a cookie tin. Kentucky Bourbon Balls
Ingredients for the cookie:
1 cup vanilla wafers
1 cup chopped pecan nuts
1 cup powdered sugar
2 tablespoons cocoa powder
1 1/2 tablespoons corn syrup
1/4 cup bourbon (Maker’s Mark)
Ingredients for Coatings:
For coconut: 1/2 cup coconut flakes
For sugar: 1/2 cup powdered sugar
For cocoa: 1/4 cup cocoa powder and 1/4 cup powdered sugar
Mix the coating(s) of your choice per ingredients listed above and set aside.
