Cucumbers cool heat of cayenne in this tartar sauce

Jim Bailey, popularly known as The Yankee Chef, has a talent for creating delicious, restaurant quality food with limited ingredients. In fact, he uses limited ingredients on purpose.

The Yankee Chef is big on simple ingredients with big flavors, which is why he likes to use fresh local ingredients in his food.

“Normally tartar sauce is made with pickles,” he explains. “Although that’s delicious with seafood, I love fresh tartar sauce.” There is one difference that makes this tartar sauce stand out. In addition to mayonnaise, he adds fresh cucumbers, lemon juice and cayenne pepper — the only ingredients in this tartar sauce.

Bailey encourages picking and chopping your own cucumbers. After all, it does not get any fresher than your own backyard.

Homemade Tartar Sauce


3/4 cup mayonnaise

1/3 cup cucumbers, minced

1 tablespoon lemon juice

1/4 teaspoon cayenne pepper


1. Add mayonnaise to a small-medium bowl.

2. Mince the cucumbers into very small pieces, and place them in the bowl too. Add lemon juice and cayenne pepper to the bowl as well.

3. Mix the ingredients together well.

4. Serve with your favorite seafood.
