Easy, colorful appetizers

Goat cheese, zucchini rollups will please partyers

Appetizers draw people together at any party, especially ones that are colorful and delicious.

Zucchini is abundant, yet ideas for that vegetable often run out.

Here is a treat for your next party: colorful zucchini appetizers stuffed with goat cheese and red pepper.

All it takes is to grill or sauté the zucchini, then wrap it around goat cheese and a slice of red pepper, and you are well on your way. To make the dish even brighter, use both yellow and green zucchini. Finish it off with a toothpick, and you are sure to draw in a crowd.

Zucchini Goat Cheese Appetizers

1 small green zucchini

1 small yellow zucchini

1 1/2 cups goat cheese

1 red pepper

1 clove garlic (optional)

1 teaspoon pepper (optional)

1/2 teaspoon sea salt (optional)

Slice the zucchini lengthwise using a cheese slicer or a wide vegetable peeler, into long strips.

Coat the slices lightly with olive oil, and season with freshly ground pepper and sea salt.

Grill or pan fry the slices on high heat, until the zucchini is lightly browned, but not soft.

Let the slices cool, otherwise the cheese filling will melt and seep out when you add it.

Place a heaping teaspoon of goat cheese and a thin slice of red pepper on the end of each zucchini slice once they are cool. To make your goat cheese taste sharper, mix with pepper and freshly pressed garlic.

Roll the zucchini around the cheese and pepper and finish with a toothpick.

Store it in the refrigerator if you are not serving this immediately.

Arrange creatively on a platter and enjoy.
