Building a healthy start to the day

Hale Cole-Tucker knows the importance of starting the day with a nutritious breakfast.

Five years ago he and his family opened a restaurant in Salem, N.H., that provided exactly the kind of environment that ensures everyone would start off their day on the right foot. “When we opened Maddie’s, our goal was to create a place where families, friends, and co-workers could gather to enjoy a great meal, wonderful service and a friendly atmosphere,” says Cole-Tucker.

Now that school is back in session, it is essential to make sure your children are partaking in the most important meal of the day. In the accompanying video, Cole-Tucker presents a very nutritious breakfast that is so simple, your kids can even make it themselves: the parfait.

Originally created in France as a frozen desert, the parfait (literally translated: “perfect”) has taken on a whole new life form in the United States. With creative people making savory parfaits by layering mashed potatoes, barbecue sauce and pulled pork, the parfait has undoubtedly become one of the most simple, and fun, dishes to prepare.

Not only is Cole Tucker’s all-natural dish a great way to start your day, it also makes for a great snack when your kids get home from school. The combination of yogurt, fresh berries, granola, and honey creates a healthy, hearty meal that literally takes minutes to prepare.

Breakfast Parfait

Serves 1 or 2

Ingredients

1 1/2 cups vanilla yogurt

handful of strawberries and blueberries

1/2 cup granola

3/4 tablespoon honey

Instructions

1.

Spoon 3/4 cup of yogurt into parfait glass.

2.

Add half of strawberries and blueberries, cover with granola and honey.

3.

Repeat process.
