Cherry Prosecco Cocktail

A bright refreshment for a Mom's day brunch

Luckily for all of us, Rockport food blogger Heather Atwood accidentally developed this delicious drink, while browsing the grocery store isles. Her inspiration was Morello cherries.

Atwood’s recipe for this Cherry Prosecco Cocktail, a rose-colored mimosa, is a unique and delicious refreshment. Instead of Champagne, Prosecco is used, and in place of orange juice, Morello cherry juice.

The combination of sparkling wine, cherry juice and sugar has a perfect flavor.

Prosecco is the name of Italy’s delightful sparkling wine and the name of the white grape that is used to produce this wine. Prosecco grapes originate in northeast Italy’s Veneto region.

Morello cherries are more tart, have more beta-carotene and are generally more nutritious than sweet cherries. Studies have linked beta-carotene to cancer prevention.

The morello cherries create a certain tartness in this cocktail that is balanced by the sugar added to the glass as well as garnishing the rim. The sugar cubes that are placed in the glass have been dipped in the cherry juice for some additional flavor.

Perfect for a special day, such as Mother’s Day, or as an alternative to a mimosa, this beverage is simple and elegant.

“This is a drink you can have anytime of year,” Atwood explains.

Cherry Prosecco Cocktail

Ingredients

For Glass Rim:

3 tablespoons super fine sugar

2 tablespoons of morello cherry juice

For Cocktail:

3 to 5 ounces of Prosecco

2 tablespoons of morello cherry juice

1 whole confectioners sugar cube

Instructions

1. Dip the rim of the glass or flute in the cherry juice. Then dip it in the super fine sugar to create a garnish on top of the glass.

2. Fill the glass with 3 to 5 ounces of Prosecco.

3. Add in 2 tablespoons of cherry juice to the glass.

4. Dip a sugar cube in the cherry juice until it absorbs the liquid.

5. Place the sugar cube in the glass right before serving.
